Have an egg-cellent time this Easter holidays!
When making lunch turns into the activity everyone benefits. And my quiche making station is an ideal place to start.
Get the family involved in all of it, or let them simply add their own toppings.
It's quick and easy, with lots of variety. It's minimal prep too.
🍴You will need:
1 x pack of pre rolled shortcrust pastry
7 x eggs
50 ml (ish) of milk
100g grated cheddar
A selection of toppings - sweetcorn, tomatoes, mushrooms, peppers, courgette etc (aim for mini pieces so they cook quickly in the quiche)
A muffin tray (we did some big and some mini)
A round biscuit cutter
1. Brush some veg oil into each muffin hole - this helps stop it sticking.
2. Cut the pastry into circles and line the muffin hole. It doesn't need to go up the sides if it doesn't fit. Reroll any spare pastry until it is all used.
3. Cracking the eggs into a jug and mix well. Add tbe milk and mix again.
4. Pour the eggs mix onto the pastry.
5. Add your cheese and toppings
6. Bake for approx 15 minutes, depending on size. They want to be browned and piping hot.
7. Allow to cool slightly and enjoy!
❄️These will keep in the fridge for 3 days, they will also freeze for 3 months +.
Cool within 2 hours of cooking.
